Everything here was amazing. We loved the creativity of the menu, and the friendliness of all staff! The flavours were truly innovative, dishes were well presented, and we enjoyed how the staff interacted with us instead of creating a stuffy environment that is sometimes typical of fine dining. Absolutely recommend to anyone interested in farm to plate dining. Service went above and beyond. Thank you for a truly memorable experience - we'll definitely be back!

Visited in Dec 2024 The dinner experience at Amaru comprises ~15 courses if you consider each of the starter bites and petit fours as individual courses. Broadly, there were 6 starter bite-sized courses, followed by 4 savoury courses including the mains, followed by 2 dessert courses, followed by 3 bite-sized petit fours. The dishes were very well prepared, presented and explained by the staff. The flavor profiles of the courses are quite distinct from each other and the restaurant has done a good job in creating a menu with such varied taste profiles. The ingredients/produce/catch are top-notch too - the quality of the marron in the marron course was fantastic and it was probably the best marron dish I’ve had in 2024. The only thing which I felt could improve was to probably have another meat or seafood course (even if at an extra price) to make the dinner a bit more comprehensive. For drinks, there was a complementary champagne at the start of the dinner. I did not go with the wine or non-alcoholic pairing. Instead, just ordered a couple of cocktails which were quite nice. I would recommend whiskey folks to try the Amaru Old Fashioned. Service was beyond exemplary with the restaurant staff taking very good care of all the diners throughout the meal. Overall, Amaru is a good restaurant and I’d definitely recommend a visit for fine dining lovers.

Amaru offered modern Australian cuisine with a focus on native ingredients & for lunch I had their Insight menu which featured ~14 courses. The lineup included intriguing combinations like marigold, carrot and finger lime; radish and bonito; kohlrabi and sunflower seed; sweetbreads and turnip; sea lettuce and eel; heirloom melons and sunrise lime; marron and blood lime & more. Each dish was thoughtfully crafted, showcasing a lovely blend of flavours and textures. A few standout dishes for me were the marron, which paired beautifully with blood lime and sambal, complemented by a tangy coastal green bao and sweet shellfish fudge. The tender Rangers Valley Wagyu, enhanced with umami-rich miso, slightly spicy mustard & truffle shavings, was a true highlight. For dessert, the creamy camel milk, paired with fresh apple, offered a wonderfully unique flavour combination. The atmosphere at Amaru was equally impressive, with warm wooden decor & dim, yellow lighting creating an elegant and cosy ambiance. The staff was both friendly and professional, adding to the overall exceptional experience.
